What I used:
1. Potatoes
2. Milk
3. Cheddar cheese (singles) (optional)
4. Parsley
5. Sausage bits
6. Black pepper
7. Salt (optional)
8. Extra virgin olive oil

One day while working from home, I felt like cooking something in my own kitchen for lunch. Scan through the kitchen for what ingredients are available, I saw some potatoes, milk and parsley that needs to be used up before they go bad and I have to throw them all away.
I dislike throwing food away because it's a waste of resources, money and think of all those people who are starving and do not have anything to eat!
It's so difficult to get fresh potatoes from the supermarket, so I definitely do not want to waste this batch.
I washed all the remaining 5 to 6 pieces of potatoes and cut them into 4. Boil them in a pot of water with the skin and until soft.
Since I want this to be a one in all meal, I took out some sausages and cut them into small bits (slice them into 4 strips and cut that 4 strips into bits).
In a saucepan, heat up some milk and melt some cheese (I used cheddar) in it too.
When the potatoes are soft, drain them and mash them in a bowl with a fork (or potato masher if you have one). It doesn't have to be very smooth (I like some small chunks to remain). Mix the mashed potatoes into the hot milk. Add more milk if you like it to be softer or the mix is too dry.
Add in black pepper (and salt if you like) for taste. I also added the extra parsley I have in the fridge.
To top it out, I did fry up some sausage bits to go with the mashed potatoes.
There you have it, my all in one meal. Be creative and add whatever ingredients that you would like to use up.
